Rhett's Nifty Recipes

Here are some of the recipes people keep asking me for. Some of them moved away before I every delivered them. So, if you're still mad at me, don't be. Here they are!


Veggie Spaghetti Sauce

1 large onion
3 cloves garlic
1 eggplant
1 zucchini
3 roma tomatoes
10 mushrooms
4 1/2 oz. can of chopped black olives
6 oz. can of tomato paste
14 1/2 oz. can of peeled, cut tomatoes (in Italian sauce)
14 1/2 oz. can of pasta sauce (in Italian seasonings)
1/2 cup chopped Italian parsley
1/2 cup chopped sun-dried tomatoes
1/4 olive oil
2 tsp. oregano
2 tsp. basil
2 tsp. salt
20 grinds of black pepper

Sauté onion and garlic in olive oil until clear, then add cans of tomatoes and chopped vegetables. Simmer covered, stirring often for about an hour so that vegetables lose moisture and become part of the sauce. Then add seasoning and let sit for several hours. Makes about 9 cups of an extremely thick, deep red sauce.



Cajun Potatoes

1 large onion
3 cloves garlic
1/4 cup vegetable oil
8 medium sized potatoes (russet works well)
2 tsp. salt
1/2 tsp. cayenne pepper
10 grinds of black pepper

Cut potatoes into cubes of about 1 cm on a side. Add all ingredients in a dutch oven and cook 1 1/2 hours at 350 degrees F stirring once every 30 minutes.



Dad's Special Pecan Pie

3 eggs
1/3 tsp. salt
1 cup dark brown sugar
1 cup dark corn syrup
2/3 cup sugar
1/3 cup butter (melted)
3 cups coarse broken pecans
Jiffy pie crust, or a shell if you're lazy (like me)

Beat together with rotary beater eggs, sugar, salt, butter, and corn syrup. Add pecans. Pour into 9-inch pie crust. Bake at 350 degrees F for 40 to 50 minutes or until custard is set and pastry is nicely browned. Makes the best pecan pie I've had in my entire life... no lie.



Sweet Ass Cookies

Also known as ``Hello Dollies'' or ``7-layer cookies'' to the less imaginative.

1/2 cup graham cracker crumbs
1/2 cup semi-sweet chocolate chips
1/2 cup butter-scotch chips
1/2 cup coconut
1/2 cup chopped nuts (preferably pecans or walnuts)
8 oz. can of sweetened condensed milk
1/2 stick of butter

Melt butter and pour into an 8x12 baking dish. Add graham cracker crumbs slowly and evenly to make crust. Add the remaining ingredients in the following order: coconut, chocolate chips, butter-scotch chips, nuts, sweetened condensed milk. Cook 20 to 30 minutes at 350 degrees F. Let cool completely (usually takes 6 hours at room temperature) and then cut into squares. The great thing about these cookies is that most people hate one ingredient, or just think that they're way too rich. More for you!
